Cod is a popular saltwater fish that ranges in weight from 1 1/2 to 100 pounds and comes from the Pacific and North Atlantic Oceans.
Cod has a mild-flavor with white, lean and firm meat that can be baked, poached, braised, or broiled.
While Atlantic cod populations are improving, the most eco-friendly choice is Alaskan Black Cod (sablefish).
When choosing fish, look for skin that glistens. The fish should be odorless and the flesh should have some elasticity when you touch it. The flesh also should not break or crack. After purchasing fresh seafood, get it home and into the refrigerator as soon as possible. Store the fish on ice on the bottom shelf of the refrigerator-but don`t let it come in contact with melting ice or allow the fish to sit in water. Frozen fish can be stored in the freezer for up to six months, but, for best taste, store fish for only one month.
