Alcohol, or ethanol, is the ingredient found in beverages that causes intoxication in the body. It comes in numerous forms including beer, wine, and hard liquor. It is absorbed in the stomach and small intestine and acts as a depressant in the central nervous system. It slows brain functions, affects physical coordination and reaction time. Alcohol use is associated with numerous health problems including certain cancers and diabetes.
Alcohol is made from the fermentation and/or distillation of yeast, sugars, and starches, and while most gluten is removed in the distillation process, it is always wise to proceed cautiously when consuming if you have Celiac disease, a gluten allergy or intolerance. Potato vodka, rum and tequila are all naturally gluten free, while whisky and bourbon could contain small traces of gluten. Wine is naturally gluten-free as it is made from grapes, but those with severe reactions to gluten should be careful as some barrels are sealed with a flour or wheat paste for aging.
Consume alcohol in moderation to prevent damage to the liver and other organs. High doses can be fatal, and numerous physiological and social problems stem from alcohol use.
