Orange peel, or orange zest, in culinary terms, is the aromatic outermost skin layer of the lemon which adds flavor to a wide variety of dishes.
The zest can be removed with a citrus zester, a vegetable peeler or a paring knife. Keep in mind, only the colored portion of the skin is considered the zest- the white pith will add a bitter, not tangy, flavor.
Because orange zest is made with the outide of the orange- the surface that is exposed to and absorbs pesticides in conventional foods- always opt for organic oranges when orange zest is called for in a recipe.
Orange peel, or zest, can be kept in a resealable storage bag in the refrigerator for up to 3 days.
