Lemon peel, or lemon zest, is the aromatic outermost skin layer of the lemon which adds bright, crisp flavor to a wide variety of dishes.
The zest can be removed with a citrus zester, a vegetable peeler or a paring knife.
Keep in mind, only the colored portion of the skin is considered the zest - the white pith will add a bitter, not tangy, flavor.
Because lemon zest is made with the outide of the lemon - the surface that is exposed to and absorbs pesticides in conventional foods- always opt for organic lemons when lemon zest is called for in a recipe.
Lemon peel, or zest, can be kept in a resealable storage bag in the refrigerator for up to 3 days.
