Xylitol is an all-natural, low-glycemic sugar alcohol that is used as a sugar substitute.
It is naturally occurring and found in the fibers of many fruits and vegetables, including various berries, corn husks, oats, and mushrooms. Commercially, it is extracted from corn fiber, birch, raspberries, plums, and corn.
Xylitol is almost as sweet as sucrose but with only two-thirds the calories.
Store xylitol in a cool, dry place.
