Goat cheese or chèvre cheese (French for "goat") is a pure white cheese with a pleasantly tart flavor.

It is easily distinguished from other cheeses due to its piquant bite.

Look for organic goat cheese with "Pur chèvre" on the label to ensure that the cheese is made entirely from goat's milk that has not been treated with antibiotics or hormones.

Goat cheese can range in texture from moist and creamy to dry and semifirm. It is available in a variety of shapes including cylinders, discs, cones and pyramids, and is often coated in herbs or pepper. Store goat cheese tightly wrapped in the refrigerator up to 2 weeks. Once opened, use within 3 days.
