Popular in both food and medicine, the maitake mushroom is most commonly used as a cancer-fighting agent. Fungi and mushrooms (polypores) contain polysaccharides, a complex carbohydrate, which helps stabilize blood pressure and blood sugar. Maitake also causes apoptosis, or “programmed suicide,” of cancer cells and contains a complex sugar (d-fraction) that stimulates immune cells.
Maitake mushrooms are an excellent culinary source of the fifth basic flavor, umami.
