Cellulose gum may ring a bell from middle school science classes for good reason: it is a polymer made from cellulose the lining of plant cells.
It is indigestible in the human body, but is often used as a food additive to prevent sugar crystallization and binds with water to create texture in low-fat products. The U.S. Food and Drug Administration has found no negative side-effects to cellulose gum.
