Peas are members of the legume family and date back as far as 9700 B.C. Edible-podded peas - including sugar snap peas and snow peas -are harvested when the pods are still soft and immature.
The most common forms of shelled peas are garden peas, snap peas, and snow peas. The outsides of garden peas are not consumed, whereas snap and snow peas are eaten whole. They are all slightly sweet and starchy.
Peas are an excellent source of vitamin C and a good source of beta carotene. They also provide phytoestrogens and flavonoids.
