Yacon is a perennial daisy that produces tuberous roots known for their sweet flavor. Yacon roots taste a bit like apple and can be eaten raw like jicama. They can also be made into a syrup that has a consistency and flavor like molasses.
Unlike sugar cane or other sugars found in nature, the fructose found in yacon is an indigestible polysaccharide called fructooligosaccharide (FOS) that acts as a prebiotic, promoting healthy gut flora. Yacon also contains a high concentration of the indigestible fiber inulin.
Since much of yacon is processed by the body without being absorbed, it is a low calorie, low glycemic option that may help balance blood sugar levels when consumed in small quantities.
Some studies have shown that yacon prohibits cancer cells from growing and reproducing.
