Burdock is a plant praised primarily for medicinal properties found in its roots. While the whole plant can be used to treat aliments, the tubular, long roots are often used as a blood purifier and diuretic. They contain anti-oxidants, vital vitamins and minerals that help with gastrointestinal issues and urinary tract purification. Topically, the root is used to treat skin conditions such as eczema and acne.
Burdock root has a semi-sweet flavor and can be used in recipes as a starchy addition to vegetable side dishes.
