Ammonium Salts

Ammonium salts are used in foods as leavening agents, dough conditioners and buffers to lighten texture; to create uniformity within a food mixture; an occasionally as flavor enhancers. They are also used as making batteries and dyes. While all ammonium salts are on the GRAS list, ammonia by itself can be toxic in large amounts, as it affects basic biochemistry and kidney function.
