[vihn-uh-GREHT] Arguably, the most popular of the five "mother sauces," vinaigrette is a basic oil-and-vinegar combination. Typically used to dress salad greens and other cold vegetable, meat or fish dishes, vinaigrette usually consists of a mixture of 3 parts oil to 1 part vinegar, plus salt and pepper.
