EDTA (ethylenediaminetetraacetic acid, calcium disodium) and its acetate salts are used as chelating agents to decrease metals in food mixtures.
More commonly, EDTA is used as a preservative in salad dressings, mayonnaise, sandwich spreads, condiments, margarines, juices, and drinks.
While EDTA is on the GRAS list, it is under further study.
