Mise en place (pronounced "miz en plas" literally "put in place") is a French phrase that literally means to "put in place".

This great technique is used in professional kitchens to refer to the ingredients, such as cuts of meat, relishes, sauces, par-cooked items, spices, freshly chopped vegetables, and other components that are required to prepared featured dishes for the evening.

By prepping everything ahead of time and keeping it separated in ramekins, small bowls or on a cutting board, you will streamline the cooking process and get better results. With everything prepped in advance, you can add ingredients as needed to your dish with no rush for timing or last minute prepping.
