Roasted chicory comes from the roasted, ground roots of certain varieties of chicory. It's used as a coffee substitute and blended with coffee to create "New Orleans" or "Creole" coffee - a popular beverage in Louisiana.
Witloof (white leaf) chicory, also known as Belgian endive, is the sprouted roots of chicory. It has pale white leaves and a cylindrical shape perfect for scooping up dips or filling for an elegant appetizer.
