The greens commonly used in mesclum include arugula, dandelion, frisee, mizuna, oak leaf, mâche, radicchio and sorrel. Choose fresh mesclun with crisp leaves and no sign of wilting. Keep refrigerated in a plastic bag for up to 5 days.
