Slice beets into 1" slices. Sprinkle with salt.
Cook beets. Preheat oven to 375 F. Oil a baking sheet and place sliced beets on baking sheet in a single layer. Roast 25 minutes or until beets are tender.
Meanwhile, prepare dressing by mixing remaining oil with vinegar, lemon juice and basil.
Arrange baby spinach on plates or serving dish.
Top with beets, drizzle with dressing and serve.
