Preheat oven to 350 degrees F. Melt coconut oil. Core and chop apples into 1” pieces. Prepare a 2-3 quart baking dish or 8-4 oz. ramekins.
In a large bowl, combine almond flour, palm sugar, salt, and cinnamon. Whisk well.
In a smaller bowl, combine melted oil and vanilla.
Stir wet ingredients into dry.
Toss chopped apples with lemon juice and scoop into baking dish or ramekins. Transfer to the oven to bake for 30 minutes.
Remove par-baked apples and top evenly with crumb topping.
Return to oven and bake another 10-12 minutes.
Serve warm.
NOTE: Original recipe yields 8 servings.
