Preheat a safe nonstick pan over medium heat. Add a teaspoon of coconut oil and swirl to coat.
In a small bowl, whisk together dry ingredients.
In another bowl, combine wet ingredients.
Add dry ingredients into wet and whisk well to form a smooth batter.
Ladle batter onto preheated pan. Cook pancakes for 1 minute or until golden; flip. Continue cooking until cooked through.
Serve with grass-fed butter and pure maple syrup.
