Preheat oven to 350 F. Line a cookie sheet with unbleached parchment paper.
Using a coffee grinder or Magic Bullet, powder the erythritol.
In a medium bowl, add all ingredients. Mix well using a wooden spoon or hand-held mixer.
Scoop out dough and roll into a 1" ball. Press fork tines down twice on the top of each cookie ball to create the classic peanut butter cookie design.
Transfer to oven and bake 13-15 minutes.
