In a medium saucepan, heat the coconut milk over medium-low heat. When simmering, add the chopped chocolate and cocoa powder.
Remove from heat. Stir with a silicone spatula until all of the chocolate is all melted and fully incorporated.
Slowly whisk in gelatin, a little at a time, to prevent clumping. Stir in vanilla. Pour into serving dishes and transfer to the refrigerator to chill for 2-3 hours.
