Heat the butter in a small skillet over medium low heat.
In a bowl, whisk eggs until fluffy.
Add the eggs to the skillet and cook for a minute until the edges are set.
Lift the edges carefully and let the liquid flow underneath the edges.
Add the broccoli to the pan, season with salt and pepper, and cover.
Cook for 1 minute and add the cheese.
When the cheese is melted, fold the omelet in half and sprinkle with the chives before serving.
