Combine the chicken, onion, garlic, cilantro and seasonings in a large bowl and toss.
Prepare the coconut-lime dressing. Scoop the cream from the top of a chilled can of coconut milk. Whisk the coconut cream with the lime juice and toss with the chicken-veggie mixture.
Season with salt.
Mix well and serve over the lettuce.
