Using a box grater, grate the cucumber on the finest grate. Squeeze out the juice from the pulp and discard.
Add grated cucumber to a medium bowl with the minced garlic, dill, sea salt, pepper and lemon juice.
Open the coconut milk and scoop out the "cream" that rises to the top. Add the specified amount to the cucumber-herb mixture.
Stir well to combine, adding liquid from the can of coconut milk if sauce is too thick.
Chill before serving.
