Preheat oven to 375 F. Grease a casserole dish with half the coconut oil.
In a small bowl, mix together spices. Layer onions, apples and grapes evenly around the casserole dish. Pour apple cider vinegar and orange juice over mixture. Sprinkle with one-fourth of the spice mixture.
Pat chicken thighs dry and rub with remaining coconut oil. Rub spice mixture over each piece. Place chicken thighs on top of the apple mixture.
Transfer to preheated oven and bake for 30 minutes, or until internal temperature reaches 165 F.
