First, make the whipped cream. In a stand mixer or using a bowl and hand mixer, whip the coconut cream to stiff peaks. Transfer to the refrigerator to chill.
Add the coconut flour, coconut milk, cocoa powder, collagen, eggs, baking soda, vanilla, and stevia to a high-powered blender. Blend until smooth.
Preheat Belgian waffle iron and spray with coconut oil spray.
Ladle batter onto preheated waffle iron and cook according to manufacturer's instructions.
Top with whipped "cream" and blackberries.
