First, poach the chicken. In a large, 2 quart heavy saucepan, bring 2 inches of filtered water to a boil. Add chicken and poach at a bare simmer, partially covered, until just cooked through, 12 to 14 minutes.
While chicken cooks, whisk together lemon juice, honey, and salt in a medium bowl until honey and salt have dissolved. Whisk in shallot and oil, then mix in apple.
Slice chicken.
Divide lettuce, grapes, pecans, chicken and celery between serving plates and drizzle with vinaigrette.
Serve.
