Halve the bok choy lengthwise.
In a skillet, add the sesame oil over medium-high heat. Add the bok choy, cut side down and cook, 1 minute. Add the aminos and 2 Tbsp. water. Cover and steam 2 minutes.
Remove from heat and set aside.
Add the coconut oil to a small skillet over medium heat. Add the pork belly and cook, stirring, until heated through, about 3 minutes.
Serve the pork belly with the bok choy.
