Preheat oven top 400 F. Chop cauliflower into small florets.
Add the cauliflower to a 9 x 13 casserole dish. Drizzle with olive oil and sprinkle with sea salt.
Cover the casserole dish with an overn-safe lid or foil. Bake 30 minutes to crisp-tender, shaking the pan halfway through.
Pour marinara and herbs over cauliflower, top with shredded mozzarella and Parmesan, and finally with pepperoni slices.
Return casserole to oven and bake another 15 minutes or until cheese is melted and golden.
