Carbohydrates are produced by photosynthesis in plants and are the primary source of energy found in plant foods including fruits, vegetables, grains, legumes and tubers.

Carbohydrates have an important role in the functioning of the internal organs, nervous system and muscles. They are the best source of energy for endurance athletics because they provide both immediate and time-released energy source. Carbohydrates are needed to regulate protein and fat metabolism, as well as help to fight infections, promote growth and lubricate the joints.

When choosing carbohydrate-rich foods, it's important to choose foods that fall low on the glycemic index. Low glycemic index foods, like beans, whole grains, and sweet potatoes, release sugar slowly into the bloodstream, helping to keep blood sugar stable.
