[gah-RAHM mah-SAH-lah] Garam meaning "warm" or "hot", is a blend of dry-roasted, ground spices that adds a sense of "warmth" to both palate and spirit, according to Indian tradition. There are many variations of garam masala which may contain up to 12 spices. Typically, garam masala contains black pepper, cinamon, cloves, coriander, cumin, cardamom, dried chilies, fennel, mace and nutmeg. If you choose to prepare garam masala at home, make it in small batches to retain its freshness. As with all spices, store in a cool, dry place for no more than 6 months.
