Description

Mung Bean Noodles, also known as cellophane noodles, are a starch-based noodle that turns clear when cooked. They contain a high level of iron, which helps move oxygen through the body through red blood cells.  They are also a good source of choline, which works to improve the structure of cell membranes.  

 
You’ll often find mung-bean noodles in Asian recipes such as spring rolls, pho, and stir-fry dishes. Consume mung bean noodles with caution- they have a high glycemic index and will cause blood sugar spikes.
