Squeeze excess liquid from the zucchinis with paper towels.
Combine turkey, zucchini, onions, pepper, tarragon, salt and beaten eggs in a large bowl.
Mix well.
Shape into patties.
Cook in a safe, nonstick pan for 6 minutes per side or until just lightly browned and internal temperature reads 165 F.
