Preheat oven to 350 degrees F.
Heat a medium, safe nonstick skillet over medium-high heat. Add the oil and swirl to coat the pan.
Add the onion and garlic and cook 2 minutes. Add the mushrooms and cook 4-5 minutes until they release their juices. Drain.
In a medium bowl, whisk the eggs. Add ground beef, onion/mushroom mixture, herbs, salt, pepper and almond meal. Mix gently to combine ingredients.
Place meatloaf in a glass baking dish, top with tomatoes and bake 45 minutes or until internal temperature reaches 160 degrees F.
