Preheat oven to 400 F.
Add the avocado oil to a cast-iron pan and heat over medium. Add the onion and peppers and cook until tender, about 3 minutes. Add the salsa and stir to combine.
Using the back of a spoon, make indentations for the eggs. Crack the eggs into the wells, season with salt and transfer to the oven.
Bake 10-12 minutes, or to desired temperature.
Transfer eggs and salsa mixture to serving plates. Top with avocados.
Serve.
