Preheat oven to 350 degrees F.
In a medium bowl, whisk together coconut flour, salt, baking soda, cream of tartar and cinnamon.
In a large bowl, combine eggs, oil, honey and grated zucchini.
Thoroughly mix dry ingredients into wet, then stir in chocolate chips.
Line a muffin tin with unbleached baking cups. Scoop batter into each, filling 3/4 full.
Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
Cool and serve.
