Preheat oven to 325 degrees F. Grease an 8 x 8 pan and line with unbleached parchment.
Add all ingredients except chocolate chips to a large bowl and beat with electric mixer to combine.(NOTE: If the batter is dry add filtered water by tablespoon to thin)
Pour batter into prepared cake pan. Sprinkle with chocolate chips.
Bake on the middle rack for 22-26 minutes.
Serve and keep in an airtight container, refrigerated.
