Put the lettuce on a plate.
Top with the strawberries and pecans.
To make the dressing, put the oil, vinegar, orange zest, honey and mustard in a jar.
Shake until well combined.
Season with salt and pepper.
Thread the shrimp onto skewers and coat with half of the dressing.
Grill on a medium high grill until pink and cooked through, about 2 minutes per side.
To serve, top the salad with the cooked shrimp and drizzle with the remaining dressing.
