Place eggs in a small pot and cover with water. Add vinegar and bring to a boil. Cover and remove from heat; let stand for 10 minutes. Prepare an ice bath.
In the meantime, mix mayo, oil and mustard with salt in a large bowl. Add diced avocado.
Drain eggs and place in the ice bath to help cool. Once cooled, peel and dice into bite-sized pieces. Add to bowl.
Toss avocado mixture and egg well to combine all ingredients. Add spinach and scallions and toss again. Serve.
