Preheat oven to 375 F. Line a 9 x 5 loaf pan with parchment paper.
Using the smallest holes on your box grater, grate the zucchini. Alternately, use the shredding attachment on your food processor.
Squeeze out the liquid from the zucchini.
In a medium bowl, add the shredded zucchini and remaining ingredients. Mix well with a silicone spatula until all ingredients are fully incorporated.
Pour into the prepared loaf pan and transfer to the oven.
Bake 40-45 minutes or until a toothpick comes out clean.
Let cool slightly, then slice and serve.
