Preheat an oven to 400 F. Preheat a cast iron skillet over medium-high heat on the stove.
Pat the salmon dry and season lightly with about half the salt and pepper.
Add the ghee to the pan and swirl to coat. Add the salmon flesh-side down and turn heat down to medium-low. Allow to cook for about 3 minutes without moving it; then flip.
Cook for 2-3 minutes more or to desired temperature. Transfer to a small baking sheet and place in the oven to keep warm.
Return the cast iron to the stove and add the green beans and garlic. Season with remaining salt and pepper and sear for about 3 minutes.
Serve salmon and green beans with lemon wedge.
