Add eggs, egg white, pumpkin, almond milk, and stevia to a medium bowl. Whisk to combine.
In a small bowl, whisk together the almond flour, coconut flour, cinnamon, sea salt, and gelatin.
Add dry ingredients to wet and whisk well to combine.
Ladle onto preheated waffle iron and cook according to manufacturer's instructions.
Top each serving with 1 Tbsp. butter, ½ oz. chopped pecans and 1 Tbsp. Lakanto Maple Flavored Syrup.
