Place a strainer set over a bowl in the sink. Fill a pot with water and bring to a rolling boil.
Drop the shrimp into the boiling water and turn off the heat.
Cook the shrimp, stirring, until tails curl and turn pink, about 2 to 2 1/2 minutes for medium shrimp, 3 minutes for large ones.
Pour drained shrimp into the strainer, and rinse with cold water.
Drain again and place in an glass container with a lid.
