In a medium bowl, mix the softened cream cheese, eggs, stevia and vanilla with a hand mixer
Add the coconut flour and baking powder, and mix to combine.
Grease a pan and heat over medium heat. Pour batter into pan to create 5-inch circles.
When edges seem dry and slightly golden and bubbles form on the top, flip. Cook on the other side for an additional 2 minutes to firm.
