Add the avocado oil to the Instant Pot vessel. Turn to saute.
Add the chicken and cook 2 minutes to sear; flip.
Top with tomatoes and broth.
Add onion, bell pepper, garlic, salt, and spices.
Close and lock the lid. Set to “Poultry” setting.
When the cooking time has elapsed do a quick release or natural release.
Using two forks or claws, shred the chicken.
Return to pot, stir to combine, and ladle into bowls.
Top with diced avocado and cilantro. Serve.
