First, make dressing. In a blender or Magic Bullet, combine cilantro, lime juice, and oil; season with half of the salt and pepper. Blend until smooth.
In a large bowl, combine chicken, cucumber, carrots, and scallions; season with remaining salt and pepper.
In another large bowl, toss lettuce with some of the dressing to coat.
Divide among serving bowls, and top with chicken mixture. Drizzle with remaining dressing, and sprinkle with cashews.
Serve.
