Preheat oven to 350 F.
Add the butter to a large, oven-safe skillet over medium high heat. When melted, add the chicken and cook stirring, 2 minutes.
Pour in the broth, spices, herbs, sea salt and chilis with their juice. Let simmer for 15-20 minutes to tender.
Stir in the sour cream and olives. Let mixture simmer and reduce until thick and creamy.
Top with shredded cheddar cheese and transfer to preheated oven. Bake 15 minutes until cheese has melted.
