Preheat oven to 425 F.
Whisk lemon juice, curry powder, ground coriander, sea salt and coconut oil.
Remove outer leaves of cauliflower. Add cauliflower to a glass baking dish. Drizzle dressing over cauliflower.
Cover and roast 35-40 minutes or to desired tenderness.
