Add half the oil to a cast iron skillet on medium heat. Season the chicken with half the salt and add to the pan. Sear for about 5 minutes on each side and set aside.
Add the remaining oil to the pan, along with the onions. Sauté for 5-7 minutes, or until onion starts to caramelize. Add garlic and sauté for 1 minute.
Add chicken stock, thyme and lemon juice and stir well. Return chicken to the pan. Scatter the olives and sliced lemon around the chicken.
Turn heat to low and cover. Simmer for 20-25 minutes.
Garnish with parsley and serve.
